Ingredients

    8 tbsp Hemp Hearts- raw shelled hemp seeds
    8 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
    4 tbsp Chia Seed (Nutiva) 1 Tbsp
    3 large Egg, fresh, whole, raw
    4 Tbsp Anthonys Coconut Flour (by BMANSON2013)
    4 tbsp Coconut Oil Organic - Spectrum Naturals
    1.5 tsp Cinnamon, ground
    0.5 tsp Ginger, ground
    0.12 tsp Celtic Sea Salt (serv 1/4 tsp = 1.3g) (by PROVERBS31JULIA)
    48 gram(s) Lankato Monkfruit - subtracted sugar alcohols

Tips

Definitely make sure coconut oil is melted. Cookies won't spread or stick together so you can pack them in on a cookie sheet. No need to grease the cookie sheet. The edges will turn golden brown.


Directions

Very important to make sure the coconut oil is completely melted.

Form into cookies and place on cookie sheet. Note: with coconut flour, your cookies will not spread or flatten, so if you make them into balls you need to flatten them into the shape in which you want them to end up! You can pack them in together as tight as you want. Bake for 15 minutes at 350 degrees. I made about 26 little cookies, but size is up to you. Tastes great with a little cream cheese.
