Ingredients

    1 1/2 cup Old Fashioned Oats dry
    1 Banana medium (7" to 7-7/8" long) fresh, peeled
    1 cup Almond Milk (Almond Breeze, Unsweetened Vanilla)
    1/2 Tbsp Coconut Oil
    1 large Egg, fresh, whole, raw
    1/2 Tbsp Chia seeds
    1/4 Tsp Salt
    1/2 Tsp Nutmeg, ground
    1/2 Tsp Vanilla Extract
    1/4 Tsp Cinnamon
    1/2 Tbsp Baking Powder
    1 Granny Smith Apple, peeled, cored and diced


Directions

Use your Blender to make the batter.
Preheat griddle to 400
Peel, core & dice the Apple. Set aside in a small dish.
Put Oats, Chia seeds, Banana (broken up) and Almond Milk in the blender,
Blend about 3 minutes until batter is smooth.
Add in the Egg and Coconut Oil, pulse 20 seconds a few times more.
Add in the seasonings (Salt, cinnamon, nutmeg) and pulse until fully mixed in.
Lastly, add in the Baking Powder and blend until fully incorporated.
Now you're ready to cook!
Make sure your griddle is at 400 degrees. (Or your cooking pan is heated to proper temperature.)
Pour batter onto the griddle until it forms about a 3-4 inch diameter circle.
Drop pieces of the diced apple onto each pancake right away before batter starts to set up.
Cook each pancake 3-4 minutes, until evenly golden brown, then flip and cook 3-4 minuets on the other side until done.
Serve immediately.
