Ingredients

2.5 cup Rotel Tomatoes Orgininal Diced Tomatoes & Green Chilies (by GATOR3)
3.5 serving Great Value All Natural Petite Diced Tomatoes In Tomato Juice 1/2 cup = 1 Serving (by LYDIAAS)
12 oz Velveeta Light Cheese Product
16 oz Ground Pork Sausage, Lean cooked, drained
1 cup (8 fl oz) Chicken Broth
8 oz Cream Cheese
Tips
The first time I tried this recipe, I left out the velveeta and the diced tomatoes in juice. The flavor was a little more like taco soup, than like nacho cheese. It was thinner and probably more lean. I thought it needed a little more oomph, so I reached for the velveeta. It may also be good with 3 cans of Rotel and just leave out the diced tomatoes. Just a few modifications you may or may not wish to try. Good luck and I hope you like it!
Directions
I made my soup in one pot on the stove top. Brown the sausage and chop with your spoon or spatula til crumbled. While the pot is still hot, add the chicken broth and stir up well to pull up the delicious brown bits from the bottom. Add tomatoes and lower heat to a simmer. Cube up velveeta and cream cheese stir in the pot. I would stir intermittently until the cheeses were fully melted. Because I cutting down on carbohydrates, instead of serving with tortilla chips, I served my soup with stuffed celery sticks. This would also be good topped with green onions or jalapenos, but I didn't have any.
