Introduction

There are a lot of chili recipes out there. This one is simple, yet tasty. Adding the corn grits helps to thicken the chili and this isn’t too spicy. You can increase your spice level by adding pepper flakes, Tabasco, more cayenne. This is good served over rice, cornbread, or just all by itself. There are a lot of chili recipes out there. Ingredients

    20 oz 93% Lean Ground Beef
    2 clove Garlic,minced
    1-15 oz. can of Tomato Sauce
    1-15 oz. can of Diced Tomatoes
    1/2 medium (2-1/2" dia.) Onion, chopped
    4 small (5" long) stalks of Celery, chopped
    1/2 Red Bell Pepper, chopped
    1/2 Green Bell Pepper, chopped
    2 tsp Chili powder
    1 tsp ground Cumin
    3/4 tsp Garlic powder
    1/2 tsp Seasoned Salt
    1/4 tsp ground Black Pepper
    1/2 tsp Dried Oregano
    1/2 tsp ground Cayenne Pepper
    1-15 oz can of Dark Red Kidney Beans
    1/4 cup Polenta (Corn Grits)
    1 tsp Olive Oil

Tips

If you like your chili a bit more spicy, increase the quantity of spice. My wife doesn't so I went mild. The corn grits is added to give a little "body" to the chili.


Directions

1. In a Dutch oven or large pot, sauté chopped garlic for about 1-2 minutes.
2. Add to the sautéed garlic, ground beef, chili powder, cumin, garlic powder, salt, pepper, oregano, and cayenne pepper and mix well. Cook over medium high heat until evenly browned.
3. Add chopped vegetables, can of red beans, tomato sauce, diced tomatoes and corn grits. Mix well and bring to a boil.
4. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally. If necessary, add a little water and simmer until vegetables are softened.
5. Makes 8 cups of chili
