Ingredients

    2 1/3 cups all-purpose flour
    1 1/4 cups sugar
    1/3 cup unsweetened cocoa powder
    2 teaspoons baking powder
    1 1/2 teaspoons ground cinnamon
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup sour cream
    1/2 cup unsweetened apple sauce
    2 eggs, beaten
    1/4 cup milk
    1 cup semi-sweet chocolate chips
    1 cup shredded zucchini

Directions

1. Preheat oven to 400 F. Grease 24 muffin cups or use paper baking cups.
2. Combine flour, sugar, cocoa, baking powder, cinnamon, baking soda and salt in large bowl. Combine sour cream, applesauce, eggs and milk in small bowl until blended; stir into flour mixture just until moistened. Fold in chips and zucchini. Spoon into prepared muffin cups, filling 2/3 full.
3. Bake 15 to 20 minutes until wooden toothpick inserted into centers comes out clean. Cool in pans on wire racks 5 minutes. Remove from pans. Cool on wire racks. Store tightly covered at room temperature.

    I substituted 1/2 cup of wheat flour for white flour, used light sour cream, added small box of chocolate pudding, brown sugar instead of white, and added some flax seeds. - 7/21/08
