Ingredients

    .5 cup Oyster Mushrooms
    .5 cup, chopped Onions, raw
    3 tsp sun dried tomatoes Bella Sun Luct
    6 egg Egg, medium
    0.5 cup Bell peppers (Green, Red, Yellow, Orange)
    .5 fruit without skin and seeds Avocados, California (Haas)
    6 oz cooked sausage, jimmy dean regular
    0.75 cup hytop mexican style cheese blend
    0.75 cup mozzarella cheese shredded winco

Tips

Any veggies can be added, but this recipe is what I use.


Directions

Cook sausage, retain grease
Pour into ungreased 9" pie plate
Cook mushrooms, onions, tomatoes and peppers in grease till semi-soft
Pour into pie plate, and mix with sausage
Scramble 6 eggs with 6 Tablespoons of water
Cut avocado into very thin strips and arrange on top of sausage/veggie mix
Pour eggs over top
Cook in 400* oven till middle no longer "jiggles"....about 25-30 minutes
Remove from oven and sprinkle cheese over top
Let cool and cut into 6 pieces
