Ingredients

1 3/4 cup long grain brown rice
1 tsp olive oil
1 tsp garlic powder
1 lb chicken, boneless skinless breast, chopped
2 tbsp olive oil
1/4 cup chopped onion
3 garlic cloves, finely chopped
1 cup zucchini, chopped
3/4 cup bell pepper, chopped
5 tbsp balsamic vinegar
1 tsp basil
1 tsp oregano
Directions
cook brown rice with 1 tsp olive oil and garlic powder according to rice package instructions.
chop vegetables and chicken. put 2 tbsp olive oil, garlic and onions in frying pan.
place thawed chicken on a plate and add 3 tbsp of balsamic vinegar, basil, oregano and a dusting of freshly ground black pepper. mix with the chicken and allow to set for a few minutes.
add zucchini and peppers to frying pan and turn burner on medium. When pan is hot, add chicken. cook chicken until cooked through.
Add fully cooked brown rice to frying pan with 2 tbsp balsamic vinegar and stir together.
serves six.
