Introduction

A simple beef jerky recipe. ~1 carb per serving.

Number of Servings: 26

Ingredients

    3 lbs 5 ounces (53 oz) flank steak
    3 tbsp Worchestershire sauce
    1.5 tsp liquid smoke
    2 tbsp kosher salt
    3/4 tsp cayenne pepper
    2 tsp garlic powder
    2 tsp chili powder
    3 tsp black pepper, coarse ground
    1/2 cup water

Directions

— Remove any fascia (silverskin) from the meat
— Freeze steak for ~30 minutes to make it easier to cut
— Cut into 1/4" slices, against the grain

NB: All spices are to taste. I'd add more cayenne and black pepper, but my family doesn't like it that way. TEHO)

— Mix spices and liquids in a bowl then pour on the steak, mixing thoroughly to ensure all pieces are covered well.

Optional: let marinate for a few hours if you want (we've found this doesn't add too much to the flavor so we mix it then put it directly into the dehydrator)

— Put onto dehydrator racks and prepare following your machine's instructions.
