Named for SuperMan, of course, our son's super hero du jour. The pound of ground chicken is actually 1/2 thigh and 1/2 breast, but nutrition data should be very similar to that given here.

Low in fat and carbs, high in protein, Vitamin A, Vitamin C, and Potassium. What makes it a cancer fighting dish? Cauliflower, broccoli, carrots, and cooked crushed tomatoes!

Ingredients

    Ground Chicken (4oz/112g), 4 serving
    (2 servings of thigh, 2 servings of breast)
    Olive Oil, 2 tbsp
    Minced Garlic, 1 tsp
    Salt, 2 dash
    Onions, raw, 1 small
    Cauliflower, raw, 1 head, small (4" dia)
    Trader Joe's Whole Kernel corn (No Salt), 1 cup
    Crushed Tomatoes, 8oz/227g (1 can)
    Trader Joe's Broccoli Slaw, 2 cup
    Basil and Oregano (to taste)

Directions

Add olive oil to pan on medium heat. Dice the onion and cauliflower, and sautee them in the olive oil with the minced garlic and salt. Turn heat to high, add the entire can of corn, and stir. Add the ground chicken and brown it in the pan. Add the crushed tomatoes and broccoli slaw. Add basil and oregano to taste.

Reduce heat to medium and cook, stirring a few times, for 10-15 minutes until the chicken has been thoroughly cooked.

Reduce heat to low, cover the pan, and simmer for 20-30 minutes.

Serve over brown rice (rice is not included in the nutrition data, since everyone wants different amounts of rice with their Stuff).

Serves 6 (approximately 1 cup each).
