Ingredients

2 lbs Pork Tenderloin cut wafer thin
3 large Egg, scrambled
3 tbsp Heavy Whipping Cream
1/2 tbsp Psyllium Husk Powder
3 cups Crushed Pork Rinds
1/2 tbsp Garlic powder
1/2 tsp Paprika
1 1/4 tsp Sea Salt
1/4 tsp Black Pepper
2 tbsp Chosen Foods Avocado Oil Spray or equivalent
Lemon wedges to serve (don’t skip the lemons!)
Tips
Air fryers work best when the food cooking is in a single layer. Cook the cutlets in small batches of 3-4 depending on their size.
It’s also important to remember that all air fryer brands are a little different, so the cooking time may vary a minute or two.
Once cutlets are finished Remove to paper towel lined plate. Allow to rest for 6-7 minutes. Check doneness - juices should run clear. Serve with lemon wedges.

Mix eggs, psyllium husk powder, and heavy whipping cream.
Dip pork cutlets into the egg mixture
Roll cutlets in pork rinds and set aside until all schnitzel pieces are complete.
Spray air fryer basket with oil spray.
Lay tenders in a single layer in the air fryer basket.
Spray schnitzel evenly with oil spray.
“Fry” the schnitzel pieces for approximately 9 minutes.
