Ingredients
-
1 Mahi Mahi steak cut up into small bits (5 oz)
1 Large corn tortillia (or whatever Soft tortillia you would like)
1/4 cup worth of shredded cabbage
1 tbsp vinegar (rice/ or cider)
3 wedges of fresh lime (youll need the juice)
1 California Avacado
1 tbsp salsa (peach salsa adds awesome sweetness)
1 tbsp low fat sour cream
1 tsp cumin powder (for taste)
Directions
Serving size for one fish taco:
In medium size skillet saute Mahi Mahi steak (5 oz for one taco), squeeze two wedges of lime juice over steak for taste (that also helps the 'fishy' flavor go away!) when cooked thouroughly cut into small bits.
While the fish is sauteing make your guacamole- mix together 1/2 mashed avacado, 1tbsp sour cream, 1tbsp salsa, and 1 tsp cumin powder, squeeze remaining lime wedge into guacamole (this juice also helps left over guac. from turning brown)
In another bowl mix shredded cabbage and 1 tbsp vinegar.
Warm your tortillia (microwave 10 seconds works just fine)
On tortillia place cabbage- then Mahi Mahi bits, and on top of that your guacamole,
Wrap your taco- Bite- Chew- Enjoy- Smile!
