Ingredients

1 cup, chopped Onions, raw
2 medium Carrots, raw
2 clove Garlic
1 small Peppers, sweet, red, fresh
1 cup kernels Yellow Sweet Corn, Frozen
1 cup Green Beans (snap)
2 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average
0.5 can (6 oz) Tomato Paste
1 tsp Cumin, ground
0.5 tsp Morton Iodized Salt
2 cup Vegetable Broth
1.5 cup Cannellini Beans White Kidney Beans Bushs
1.5 cup Black Beans - canned - Kroger
1 cup, cubes Sweet potato
.5 tbsp Olive Oil
1 cup, chopped Green Peppers (bell peppers)
Directions
Saute onions, carrots and garlic until softened.
Add peppers, sweet potato, tomatoes, tomato paste, cumin, salt and stock. Bring to boil and simmer covered for 15-30 minutes or until veggies are tender. Add corn, green beans, and canned beans and cook, uncovered, for another 15-20 minutes.
