Ingredients

    2.0 large Egg, fresh, whole, raw
    2.0 cup King Arthur 100% Unbleached White Whole Wheat Flour
    1.75 cup Dairy, Milk - Whole - 1 cup
    6.0 tbsp Butter, unsalted
    4.0 tsp Granulated Sugar
    4.0 tsp Baking Powder
    1.0 tsp Vanilla Extract
    0.5 cup Blueberries, fresh

Directions

Separate the eggs and beat egg whites until fluffy with soft peaks forming. Melt the butter and then add the milk and warm up in microwave until butter is melted in the milk. Mix flour sugar and baking powder together then roll the blueberries around in the flour mix and gently shake off excess flour back into the bowl and set the blueberries aside*. Add the butter and milk and vanilla extract and egg yolks. Stir until incorporated then gently fold in the egg whites. *dipping the blueberries in the flour ensures that they will float in the batter and not sink. Also I usually make a couple of plain waffles for my son then add the blueberries gently folding them into the batter. I use a half cup measuring cup to ladle the batter into the waffle iron.

Serving Size: Makes approximately 7 waffles using 1/2 cup measuring cup.
