Ingredients

    17 large Egg, fresh, whole, raw
    6 serving Bacon, Applegate Farms Sunday Bacon (2 strips)
    3 cup, cubes Sweet potato
    2 cup Spinach, fresh
    1 cup pieces Mushrooms, cooked
    1 oz Blue Cheese

Directions

Cook bacon on stove top, cool and cut into bite size pieces. Dice sweet potatoes and place in 9x13 glass pan to cook at 400• for 20 minutes using bacon grease to coat, plus seasonings of choice. Use remaining bacon grease to cook mushrooms on the stove. Add bacon to glass dish of potatoes, along with mushrooms, torn spinach, and 17 eggs (arbitrary because that’s how many I had). Crumble blue cheese on top and bake for 25 mins at 425. Hope for the best. I hope no one reads this because it’s nonsense! Serving Size: Makes 8 squares
