Ingredients

Crust:
1.5 C. graham cracker crumbs
2 T. sugar
.25 C. melted margarine
Filling:
1C. sugar
4 eggs, or egg substitute
2 T. cornstarch
1 T. vanilla extract
24oz. (3 - 8oz. pkg.) fat free cream cheese
Topping:
2 C. Sour Cream, reduced fat
.5 C. sugar
1 t. vanilla extract
Directions
*Preheat oven to 350F.
Crust: mix dry ingredients, then add melted margarine; press in bottom of 10 inch Spring form pan. Set aside.
Filling: cream sugar with cream cheese in large mixing bowl. Add eggs (egg substitiute) one at a time, and mix. Add cornstarch and vanilla. Mix until smooth. Pour into prepared crust and bake at 350F for 35-40min. (until knife comes out clean when inserted into the middle of the cake) Remove from oven and cool for 15min.
**Increase OVEN TEMPERATURE to 475F.**
Topping: In a small bowl, with a spoon, mix topping ingredients together and pour evenly over cooled cake. -Return cake with topping to the 475F oven. Bake approx. 7min. (until edges bubble).
-Remove cake from oven and cool 15min. in pan.
**Turn oven OFF**
-Carefully remove cake from Spring form pan to cake platter or plate.
-Refrigerate at least 4 hours, then top with cherries, or other favorite fruit!
