Introduction

I'm doing the best I can to follow the BRAT diet, but I'm desperate for protein. This is my latest attempt to get some protein to hasten my recovery without burdening my system too much.

I made my own chicken broth from scratch, but use whatever you like. Use red lentils and pre-cooked rice for a much reduced cooking time

Number of Servings: 3

Ingredients

    4 cup (8 fl oz) Chicken Broth
    .25 cup Lentils
    .5 cup Brown Rice, medium grain
    .5 serving Birds Eye Cauliflower Rice (3/4 C / 82g)
    4 spear, medium (5-1/4" to 7" lo Asparagus, fresh
    0.25 cup Tofu, firm

Tips

Use whatever vegetables you like, but for the purposes of recovering from gut problems make sure you overcook them to mush. This isn't the time for haute cuisine.


Directions

Make or heat broth. Add lentils and boil for 10 minutes. Add rice and cauliflower rice. Mash tofu and add to pot and boil for another 5-10 minutes. Add seasonings to taste - I prefer soy sauce and sesame oil.

Serving Size: three 1.5 cup servings
