Spicy Turkey Bundles Spicy Turkey Bundles
Number of Servings: 6

Ingredients

    1 lb ground turkey (or chicken)
    2 clove Garlic - minced
    1 tbsp Canola Oil
    1/3 cup chopped peanuts
    3 tbsp Liquid Aminos or soy sauce
    1/8 tsp crushed red pepper flakes
    1 1/2 tbsp minced Ginger Root
    1 cup chopped Water Chestnuts
    3 Green Onion - chopped finely
    12 large Bib Lettuce leaves


Directions

Combine turkey, ginger, garlic and red pepper flake in a medium bowl. Heat oil in large skillet over medium-high heat. Add turkey mixture; cook and stir 2-3 minutes until turkey is cooked through (may need to drain some of the liquid off at this point, but don't drain it all). Add aminos (or soy sauce) and stir-fry for 30 second. Add water chestnuts, green onion and peanuts and heat through. Divide evenly among the lettuce leaves and roll up.

Serving Size: Makes 12 wraps or serves 6
