Ingredients

4 Whole Wheat Tortillas, burrito sized
1 cup shredded light colby, cheddar, or monteray jack cheese
1/2 cup sliced grape tomatoes
1 cup finely chopped red, green, yellow and orange bell peppers
1 whole haas avocado, peeled, seed removed
Directions
Slice cherry tomatoes in half
Finely chop or dice 4 whole bell peppers, one of each color
mash avocado until it is slighly lumpy
On a microwave safe plate place 1 tortilla. Top one half with 2 oz of cheese, a small handful of tomato slices, and a small handful of bell peppers.
Microwave for 1 minute on high, or until cheese is completely melted
spread 1 to tablespoons of avocado on the plain half, fold over and lightly knead so that the ingredients spread out to cover the whole tortilla.
cut into 4 triangles with a pizza cutter for smaller children, or three triangles for older kids and adults.
Repeat for each tortilla
this recipe serves 4 adults or 8 kids
*to serve as an appetizer, try baking the quesadillas after they are microwaved, to make the tortilla crispier, and serve avocado as a dip.
