Ingredients
-
2.0 large Egg, fresh, whole, raw
0.5 cup Blueberries, fresh
0.5 cup, sliced Strawberries, fresh
0.33 cup Oats, Quaker (1 cup dry oats)
8.0 oz Cheese--Philadelphia Cream Cheese 1/3 less fat
0.33 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
10.6 oz cup Two Good Blueberry Greek Yogurt by Light n FIT
32.0 tsp Anthony's Natural Erythritol Sweetener (4 sugar alcohols per)
3.0 tbsp Butter, salted
Directions
Blend the oats into a flour then mix in the almond flour, half the erythritol and melted butter. Spread evenly into a well greased 8"x8" glass pan then bake at 350° for about 10 minutes. While it is baking, mix the cream cheese (room temperature), Greek yogurt (I used blueberry but you could use vanilla or strawberry or any flavor), eggs and remaining erythritol. It is best to use a hand mixer. Remove the crust and pour the cheesecake mixture into the pan. Bake for 25 more minutes or until the center is set. Once it has cooled, add sliced strawberries and blueberries then chill before serving.
