Ingredients

6 tbsp Extra Virgin Olive Oil
6 cloves Garlic
6 slice Bread, cubed
4 large Eggs, fresh, whole, raw
1 box Low Sodium Chicken Broth
2 c water
Tips
I keep sliced bread in the freezer. I find it is easier for me to cut up into cubes when the bread is frozen.
Directions
In a saucepan set your broth and water up to boil.
In your soup pot sautée the garlic in your olive oil. Once the garlic is fragrant, add the cubed bread.
Stir the bread to coat completely in the garlic oil. Continue cooking the bread until it is toasted.
Pour the boiling broth mixture over the garlic bread. It will dissolve. (You can whisk it in if the bread doesn't dissolve to your liking.)
Bring to a boil and simmer for 5 minutes.
Scramble up the eggs in a large measuring cup and slowly pour into the simmering soup while stirring.
Simmer another 5 minutes.
You can serve right away or let it sit overnight for a deeper flavor.
