Number of Servings: 6

Ingredients

    1 medium (2-1/2" dia) Onions, chopped
    3 medium Carrots, peeled and Cut into coins
    2 sweetpotato, peeled and cubed
    400 grams Chickpeas (garbanzo beans) , drained
    300 grams Green Beans (snap), cut into 1 inch pieces
    1 tbsp Coconut Oil
    .25 cup (8 fl oz) Curry Sauce
    .5 cup Water, tap
    1 can Coconut Milk,

Tips

Adjust seasoning and heat to taste. Add any extra vegetables as desired.


Directions

Heat the coconut oil. Saute the onions until soft. Add the remaining vegetables plus the liquids and the curry sauce. Bring up to a boil, reduce heat and cover. Simmer until the vegetables are cooked, about 20 minutes.

Serve with rice or naan bread.
