Perfect for a dinner party or just for a night at home Perfect for a dinner party or just for a night at home
Number of Servings: 6


    1/2 large red onion - cubed
    1 red bell pepper - cubed
    1 yellow bell pepper - cubed
    1 can red (kidney) beans - drained
    1 can black beans - drained
    2 cups tomato juice
    1 packet chili mix
    2 tsp light chili powder
    3/4 tbsp olive oil


cube 1/2 onion and bell peppers
place chili pot on medium heat and add about 3/4 tbsp of olive oil to pot and allow to heat for a minute or two
place veggies in pot and saute for approximately 2 to 4 minutes prior to placing beans in pot
drain both cans of beans and place in pot, stirring well with the veggies
add the dry ingredients prior to adding tomato juice and stir to mix well
add tomato juice and allow to come to a boil for about 2 minutes
place lid on pot and simmer on low-medium heat for 10 to 20 minutes

serve as you would any other chili...this is a great treat!
