Introduction

This is a healthier version of chicken salad that my mom sometimes makes. The little bit of ranch gives it a nice flavor not found in a traditional chicken salad. Number of Servings: 6

Ingredients

    2 1/2 cups cooked, diced chicken breast (no skin)
    1/4 cup chopped pecans (or walnuts)
    1/2 cup celery, finely chopped
    1/2 cup onion, finely chopped
    3/4 cup fat free mayonnaise
    1 tablespoon dijon mustard
    1 tablespoon fat free ranch dressing
    2 teaspoons lemon juice
    salt and pepper to taste

Directions

1. In a bowl, whisk together the mayonnaise, dijon mustard, ranch dressing, salt, pepper, and lemon juice until smooth.
2. Add the chicken, pecans, celery, and onion. Stir to combine
3. Cover and refrigerate for an hour before serving.
Notes: the nutrition facts do not reflect the salt/pepper.
-Adding apples, berries, or other fruits will make this recipe go farther, as well as adding more celery.

    This was amazing! First time ever that I'd made chicken salad...and I'm so glad I did! I substituted apples for the pecans (husband doesn't like) and it turned out great! LOVE IT!!! - 4/15/09

    Very good! I added extra celery, grapes and 1 c. of peas to help it go further. It was really good. For supper one night I ate it with lettuce and made it a meal. I will make it again! - 8/4/08
