Introduction

A simple to make side that replaces a veggie and a starch. Since rice and peas combine to make a complete protein, this is also a tasty vegetarian main dish. Number of Servings: 4

Ingredients

    1 cup cooked white rice
    1 cup frozen peas
    1 small can mushrooms, including liquid
    3 tbs. butter
    .5 tsp. garlic salt
    .25 tsp. black pepper

Directions

Combine all ingredients in a saucepan to heat on stovetop at medium setting. Stir gently until well-blended and creamy, to avoid crushing the peas.

Alternate method: Combine all ingredients into a covered glass casserole. Heat in microwave for up to 10 minutes (depending on strength of oven), stirring 3 times while cooking.

    Sounds very good. I might use mixture of brown and white rice or brown and ebony rice. Thank you for sharing this recipe - 1/8/09

    You're right! It's great with any of these options. We've also added shredded leftover chicken or tuna to the mixture for a simple casserole.
