This is a flavorful and healthful snack for parties and pot lucks at work. And, since it does not have mayo, it is safe for summertime events. Ingredients

    1 Can sweet yellow corn.
    1 Can black beans, appx. 1.5 cups
    1 Can black eyed peas, appx 1.5 cups
    2 tsp onion powder (1 small onion chopped can be substituted)
    3 cloves fresh garlic, minced
    2 cups cherry tomatoes, quartered
    1/2 Tsp. Salt, to taste
    1/4 Tsp. Pepper, to taste
    3 TBSP Light or fat free Italian dressing, to coat.

Directions

Drain corn, beans and black eyed peas and combine in large bowl. Mix remaining ingredients and coat with salad dressing. Add salt and pepper to taste. Cover and chill for at least two hours before serving. Serve with toasted pita chips or wheat crackers.
