Ingredients
-
–6 drumsticks, brined for 24 hours and cooked in Crockpot 12 hours
–2 T of ghee
–3 T of chicken drippings
–½ cup onion, chopped
–4 cloves garlic, minced
–3 cups of homemade chicken broth or stock
–2 carrots, chopped
–2 celery stalks, chopped
–5-6 white button mushrooms, sliced or whole
–1 cup cashew milk
–½ cup cassava flour
–2 green onions, sliced
–1 t salt
–¼ t finely chopped rosemary
–¼ t finely chopped thyme
–½ t sage
–1 t parsley
–a few dashes of black pepper
Directions
–Brine & cook the chicken, then remove from the bones
–In a large saucepan placed over a medium heat, melt the ghee & drippings
–Add the onions to the same saucepan and cook in the juices. Once they have sautéed and begun to brown, add the garlic and cook for a few minutes together
–Whisk in the chicken broth
–Add in the vegetables & seasoning
–Allow the stew to come to a simmer, and then cook on low, but still maintain the simmer.
–Cover and cook for approximately 30 minutes
–Stir cassava flour & cashew milk together until smooth
–Stir in the cashew milk mixture & green onions
–Add the chicken
–Cook for just about another 2 minutes and serve
