Introduction

This is a great alternative to regular tacos. Serve this on WW tortillas with all your favorite taco fixings and you have a complete meal. This is a great alternative to regular tacos. Serve this on WW tortillas with all your favorite taco fixings and you have a complete meal.

Ingredients

    3/4 C. dry lentils
    3/4 C. brown rice
    4 C. chicken or vegetable broth
    2 tsp. chili powder
    1/2 tsp. cumin
    1 tsp. onion powder
    1/4 tsp. garlic powder
    1 TBS. olive oil
    salt to taste

Directions

Combine all ingredients, bring to a boil, cover and cook about 1 hour, or until rice and beans are tender. You can also throw all the ingredients in the crock pot and cook on low 6-8 hours.
Makes about 6 1/2 cup servings.

    Incredible!
    Made in Crock Pot. Doubled the recipe, as my crock pot is a 5 qt. I forgot the oil & just used water, instead of using broth - I didn't have any. It is VERY good. Will definitely make again. - 8/5/10

    Good
    Instead of dressing this up as a taco I ate it as a Mexican side dish. It was good. Not too spicy but with a nice flavor and simple to make. - 9/17/09
