Introduction

Good summer salad for Celiacs and gluten/wheat intolerant people. Good summer salad for Celiacs and gluten/wheat intolerant people.
Number of Servings: 6

Ingredients

    1 pound box Gluten Free macaroni
    6 oz can tuna chunks in spring water, drained
    6 or 8 cocktail gherkins
    3 spring onions, sliced thin
    2 stalks celery sliced thin
    6 baby carrots sliced thin
    2 1/2 Tbsp light mayonnaise
    (optional) 6 or 8 cocktail prawns cut in half

Directions

Add macaroni to a large pan of boiling water. Cook 8-10 minutes. Pour into colander and rinse first with hot water to remove excess starch then with cold water to cool. Drain and put in large bowl. Add vegetables, tuna and mayonnaise. Stir until well mixed. Cover and refrigerate 1-2 hours. Serves 6. Unsure of nutritional info.
