Introduction

This is very yummy. I added a few things that we like. I like to add some boca crumbles.
You can also add Jimmy Dean turkey crumbles if you do meat.
I usually make 1/2 of the recipe for myself.
Sprinkle some Taco seasoning on top or cumin for a kick when serving.

Ingredients

    1.5 1tsp Olive Oil
    .5 cup, chopped Onions, raw
    2 tbsp chopped Scallions, raw
    .5 tbsp McKays Chicken Seasoning (by HOOK7890)
    .0125 tsp Spices, Turmeric
    .5 tsp Salt
    .5 tsp Onion powder
    .25 tsp Garlic powder
    2 Tbspn Red Star, Nutritional Yeast, Vegetarian Support Formula
    .5 cup, pieces or slices Mushrooms, fresh
    .5 cup Bell peppers (Green, Red, Yellow, Orange)
    .25 cup Sun Dried Tomatoes
    1 block Tofu, firm , 12 oz packed in water

Tips

The book has lots of good recipes, exercise tips and "food" for thought if you have Diabetes. I am not Vegan but try to have meatless meals often. The Boca crumbles are NOT figured into nutritional data.

Directions

Rinse tofu in a colander and drain and pat dry. In a large skillet saute the onions,scallions, mushrooms, and chopped peppers (and Boca crumbles if using), until soft. Crumble the tofu into skillet with onions and other ingredients. Add the remaining ingredients and stir well. Cook about 5 to 10 minutes until heated through. The dish will turn a golden yellow from the tumeric.

Serving Size: 8 servings, usual serving is about 1/2 cup
