Introduction

Ingredients

    1 C. Short grain rice (or other glutinous rice such as Arborio)
    .25 C. Sugar
    .25 C. Splenda
    1 can Fat Free Evaporated Milk
    1 can Regular Evaporated Milk
    1 t. Vanilla Extract
    1 t. Cinnamon, ground (or to taste)
    1 t. Nutmeg (or to taste)
    .25 t. salt

Directions

Measure all ingredients and put into the crock of a slow cooker. Cover tightly and cook on high 2-4 hours, or until rice is tender and pudding is creamy. A 1/2 C. of raisins may be added to the pudding in the last hour, if desired. Splenda may be successfully substituted for the .25 C. of sugar.

*Cook's Note: After over-cooking this the first time I made it, I recommend checking on it every 30 minutes or so after the first 2 hours.
