Ingredients

    1.0 fl oz Lemon Juice
    1.0 clove Garlic
    0.25 cup, chopped Onions, raw
    3.0 medium (4-1/8" long) Scallions, raw
    1.0 tbsp Parsley
    1.0 cup, chopped Green Peppers (bell peppers)
    1.5 tbsp Extra Virgin Olive Oil
    1.0 cup Ancent Harvest's Quinoa, Traditional, Organic (1/4 cup dry / 46 grams)
    0.25 cup Pumpkin Seeds (whole seeds, roasted)

Directions

Cook quinoa per package instructions. Dice peppers. Dice garlic to small pieces. Add peppers, garlic, parsley, lemon and olive oil together. Add roasted pumpkin seeds and quinoa. Fold all together. Serving Size: 4 1.5 cup servings
