Number of Servings: 4

    1 pound lean ground turkey
    4 flour tortillas (6.5 inch)
1 cup Monterey jack cheese (or preferred cheese)
1 package Old El Paso taco seasoning, 40% less sodium
    2/3 cup water

1. Preheat oven to 350 degrees Fahrenheit.

2. Brown turkey on stove.

3. Stir in taco seasoning and water. Cook for 2-4 minutes on medium-high heat or until water is almost gone.

4. In an ungreased 8" x 8" baking dish, place one tortilla on the bottom and cover with 1/2 cup of seasoned turkey. Continue layering, alternating tortilla and turkey. Top with cheese.

5. Bake for 15 minutes until cheese is melted and lasagna is heated through.

6. (Optional) To get a golden brown cheese, broil for 2-5 minutes.

Makes 4 servings of 4" x 4" squares.

  • Love this recipe! Simple to make. I added some fresh diced tomato to each layer and topped with Pepper Jack cheese to give it a kick! - 8/21/08
