Introduction

A fantastic, easy to prepare, tasty summer salad that's relatively healthy. A fantastic, easy to prepare, tasty summer salad that's relatively healthy.
Number of Servings: 8

Ingredients

    1 bulb fennel with stalks, greens removed
    Juice of two lemons
    3 fresh Granny Smith (Green) apples
    2/3 cup whole cashews, salted
    1/3 cup grated parmesan cheese

Directions

Chop Fennel into bite sized portions (mine are typically no bigger than 1" x 1/4")

Cut apples into eight sections each and slice each section in 1/8" slices (give or take)

Combine fennel, apples and lemon juice in large mixing bowl

Mix in parmesan cheese

Chop cashews into "smaller" pieces and spread over salad (or mix in, if so desired)

Eat and enjoy!

(Salad will fridge store for approximately 3-4 days)
