Ingredients

    2 large Egg, fresh, whole, raw
    .33 cup, chopped Broccoli, cooked
    .33 cup, chopped Green Peppers (bell peppers)
    .33 cup Spinach, frozen
    .33 cup, chopped Onions, raw
    .25 cup, shredded Cheddar Cheese

Tips

Easy to make one serving or several servings. I use frozen chopped vegetables.


Directions

Preheat skillet on medium on stove top. Add vegetables to skillet; stir and cook until vegetables are soft. Mix eggs and cheese together and pour over vegetables. Cover. Cook until eggs are firm.
Multiply all ingredients and use a larger skillet to prep several servings ahead.
