Ingredients

    36 serving Nature's Greens, Collard Greens, 3 Cups
    2 unit, cooked (yield from 1 lb Bacon, pork, microwaved
    32 tsp Hot Pepper Sauce
    .6667 cup Butter, unsalted
    3 tbsp Garlic powder
    3 tbsp Pepper, black
    36 tsp Lawrys Seasoned Salts

Tips

This recipe was adapted to use bacon instead of traditional ham bones. Add seasoning salt after cooking if needed.


Directions

1. Cook off bacon; cool and crumble or dice.
2. Bring 7.5 gallons of water to a boil. Add bacon, seasoned salt, garlic powder, black pepper, and hot sauce. Simmer for 45 minutes.
3. Wash collards, destem and cut into 1/2 to 1 inch thick pieces. Add to pot with butter, simmer 45-60 minutes while stirring occasionally.
