Introduction

This is a slight variation on my previous carnivore pork rind bread recipe. The amount of pork rinds and cheese is higher in this recipe. Once again, xanthan gum is an optional ingredient. Ingredients

    7 serving UTZ - Pork Rinds
    15 serving Egg white, large
    1.5 cup Mozzarella Shredded Cheese - Aldi's Happy Farms
    0.5 tsp Cream Of Tartar
    0.5 tsp Xanthan Gum (by MERCEDES3414)

Tips

Toast or broil before serving.


Directions

Preheat oven to 325 degrees. Leave egg whites out for 30 minutes to help whip easier. Grind pork rinds into flour. Grease two standard bread pans with a fat of your choice. In a large bowl, whip the egg whites with cream of tartar and optional xanthan gum until soft peaks or about 5-6 minutes. Fold in about 1/3 of the crushed pork rinds and shredded cheese at a time until fully incorporated with no lumps. The volume may reduce at this point in the bowl due to the density. Pour mixture into greased loaf pans and cook for 65 minutes at 325. After 65 minutes, cover breads and cook for another 65 minutes. Cool the breads on a rack before removing from pans. Fully cool before storing. Store in airtight container to preserve freshness. The bread may also be wrapped and frozen.
