Ingredients

    1.5 cup Brown Rice, medium grain
    1.75 cup Red Beans, Food Club
    1.75 cup Tomatoes, Petite Diced, Hunts
    7 oz Mushrooms, whole, canned (7 oz; 4 oz dry)
    .25 tsp Red Pepper Flakes, Crushed (by LITHIUM771)
    .25 tbsp Chili powder
    0.25 tsp McCormick Cajun Seasoning (by TTROUBLE)
    .25 tbsp Cilantro, dried
    0.25 tsp Morton's Lite Salt
    .5 tsp Old El Paso Taco Seasoning
    1 tbsp Olive Oil, Extra Vergin Bertolli (by GOLDFOOT)

Tips

As is, this item is vegetarian friendly, but you could easily add any desired meats. Would also be good with sour cream, cheese, and or guacamole.


Directions

Cook rice according to directions. (I double the amount of water and rince the rice after draining to reduce the starchiness.)

While rice cooks, saute vegetables in olive oil until onions are tender. Add tomatoes, mushrooms and seasonings and let simmer until rice is done. Mix the beans and tomato mixture to rice and heat back to a simmer, cover and simmer until most of the moisture is absorbed, stirring often.
