Ingredients

    3 cups frozen hash browns (thawed)
    2 Tbsp. butter (melted)
    1/2 cup 1% cottage cheese
    3/4 cup Mozzarella cheese
    10 oz spinach (fresh or frozen, chopped)
    4 eggs (beaten)
    1/4 cup milk
    1/2 tsp. salt
    1/4 tsp. pepper

Directions

Combine hash browns and butter in a greased 9-in. pie plate. Press onto the bottom and up the sides, forming a shell. Bake at 425 degrees for 25 minutes. MIx remaining ingredients in a bowl, and pour over hash brown crust and return to oven at 325 degrees for 40 minutes, or until knife into center comes out clean.

    Why don't we get real here and just divide it into four servings at 426 calories. I mean, seriously. 1/16 a slice!! :D :D :D

    I agree - 3 people ate the entire quiche. There's no way this makes 16 servings. It was delicious though - and I don't particularly like quiche! - 5/13/07

    Served over this weekend dividing it into 4 servings*. W/green salad, it was a perfect a light supper. 1/4 of total recipe = 430 cal; total fat 21g; choles 288mg; sodium 808mg; carb 36g; dietary fiber 4g; protein 28g (amounts approx)
    *It is impossible to get 16 meaningful servings from recipe.

    Very Good
    Tried it tonight - will make it for Christmas morning/brunch. Needs onions or some other flavour and I agree there is no way to make it 16 servings in a 9 inch pie plate. We had 5 servings, with salad. We doubled the recipe to make two. - 8/11/13
