Introduction

My family loves meatloaf so I had to find a way to also make it low carb.
They all loved it.
I use convection ovens so my cook time was 60 minutes.

Ingredients

    24 oz Beef, ground, 80% lean meat / 20% fat, patty, cooked, broiled [hamburger, ground round]
    3.25 serving Pork Rinds(Pork Skins)(1/2 oz)
    .33 cup Tomato Sauce
    1 serving Egg white, large
    .25 cup, chopped Green Peppers (bell peppers)
    .25 cup, chopped Onions, raw
    .5 tsp Garlic powder
    .5 tsp Pepper, black
    1 tsp Salt

Directions

Preheat oven to 350°

First you need to crush pork rinds into crumbs. Next in a large bowl add all ingredients and mix throughly together.

In a baking dish (I used a loaf pan) form the entire mixture into a loaf shape. Place in preheated oven for about 1 hour 15 minutes.
I checked mine at about 50 minutes and there was lot of juice in pan. I removed most of the juice and contained baking until done. As I stated earlier in my convection ovens it was done in 65 minutes so check to see if your oven bakes at a shorter time.
