Ingredients

2 tbsp *Flax Seed Meal (ground flax)
3 fl oz Water, tap
.5 cup Applesauce, unsweetened
.75 cup, packed Brown Sugar
.5 cup Granulated Sugar
1 tsp Vanilla Extract
1 tbsp Cinnamon, ground
.5 tsp Cardamom, ground
.5 tsp Nutmeg, ground
1 tsp Allspice
.5 tsp Ginger, ground
.25 tsp Cloves, ground
1 tsp Salt
1 tsp Baking Soda
1.5 cup Flour, white
3 cup Oats, Quaker (1 cup dry oats)
.5 cup, packed Raisins
0.5 cup Cranberries, dried, sweetened (craisins)
1 cup, chopped Pecans
Directions
Heat oven to 350°F.
In large bowl, mix ground flax with water. Wait 5 minutes. Add oil, applesauce, sugars and vanilla and beat by hand or on medium speed of electric mixer until well mixed.
Add combined flour, baking soda, spices and salt; mix well. Add oats, raisins, dried cranberries and nuts; mix well.
Drop dough by tablespoonfuls or use 1 tbsp size scoop onto parchment paper or ungreased cookie sheets. Flatten slightly.*
Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
