Ingredients

    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 dash Salt
    1 cup Cider Vinegar
    2 serving Platains Sliced (by CD1896801)
    2 cup (8 fl oz) Water, tap
    1 cup Canola Oil
    1 oz Tropical (approx NF) Queso De Freir Semi-Soft White Cheese for Frying (by MARITZA-FITNESS)
    1 serving 1/4 Avocado
    2 large Scrambled Egg
    1 tbsp Butter, unsalted

Directions

1. Place the sliced onions in a small bowl with a heavy pinch of salt and vinegar. Letting it soak while preparing the other ingredients, for about 1 hour.
2. After peeling the plantains and cutting then into slices. Place then into a medium pot with enough water to cover them and add salt to taste. Let the plantain boil over high heat and cook until they are very tender about 30 minutes.
3. In a medium, pan heats the canola oil And place the sliced cheese until it looks bronzed, about 3 minutes, then removed from pan and place in a paper towel so it can absorb the excess of oil. Apply the same methods to the eggs.
4. Wipe out the pan from the oil and just add one teaspoon of oil back add the onions in medium to high heat, then cover to cook for 10 minutes until soft.
5. Once the plantains are tender take them out and place them in a bowl but keep the starchy liquid warm. Proceed to smash the plantain using a little of the water left and also add butter while doing it. do it until it's soft and creamy.
6. The mangu with the cheese, eggs, and avocado to side. Do not forget to put onions on top of the mangu.
