Introduction

Ingredients

    4 ounces Mushrooms
    1 medium Onion
    2 stalks Celery
    1 medium Bell Pepper
    1 Jalapeno Pepper
    1 Tbsp Italian seasoning
    1 tsp Lemon juice
    3 cloves Garlic
    1 Tbsp Olive oil
    28 oz can diced tomatoes, drained
    1 lb large Shrimps

Tips

This recipe is not very spicy. Can add more jalapeno depending on taste.


Directions

Chop mushrooms; set aside. Chop onions; set aside. Chop celery; set aside.
Remove the stems, pith and seeds from the green bell pepper and the jalapeño. Chop peppers and set each aside separately.
Mince garlic; set aside. Pat dry the shrimp with paper towels and set aside.
Add olive oil to a large sauté pan over medium-high heat. Add the onion, celery, and green bell pepper. Sauté until soft, about 4 minutes. Add the garlic and sauté until fragrant, about 30 seconds. Add the italian seasoning, diced tomatoes and mushrooms. Reduce the heat to medium and simmer until the sauce thickens slightly, about 5 minutes.
Add shrimp, lemon juice and jalapeño to the pan. Simmer until the shrimp turn pink, about 4 minutes.
Divide the shrimp Diablo among 3 bowls and enjoy.
