Ingredients

    4 cups Bob's Red Mill Superfine Almond Flour
    6 Organic Eggs
    3 cup, mashed extra ripe banana (approximately 6 bananas)
    2 tbsp Vanilla Extract
    2 tbsp Honey
    1 cup Walnuts, chopped
    2 tbsp Ground Ceylon Cinnamon
    2 tsp Baking Soda
    Coconut Oil Spray to coat pans
    1/2 tsp Salt

Directions

Preheat oven to 350°F. Grease two loaf pans and line with parchment paper allowing ends to extend past pan to make "handles". Mix eggs, bananas, vanilla, and honey in a large bowl until well blended. Add dry ingredients with the exception of walnuts and whisk until combined. Stir in walnuts. Divide batter evenly between two loaf pans. Bake at 350°F for 40-50 minutes or until toothpick inserted in center cones out clean. Remove from oven. Lift bread from pan with parchment paper and place on cooling rack. Remove parchment paper. Cool completely (at least 2 hours) before slicing and serving. Can be made KETO by reducing bananas to 2 cups and substituting a keto friendly sweetener for honey or omitting sweetener.
