These are a treat and a healthy one at that although full disclosure, it's hard to stop at just one! They are so delicious. Number of Servings: 12

Ingredients

    1 cup Flour, white
    1 cup (96 grams) Rolled Oats ground into flour or use 1 more cup of regular or whole wheat flour
    2 tsp Baking Soda
    1/2 tsp (0.5 tsp) Salt
    1 tsp Cinnamon, ground
    1/2 tsp (.5 tsp) Nutmeg, ground
    1/2 tsp (.5 tsp) cardamon ground optional
    3/4 cup (.75 cup) Granulated Sugar 1 cup, peel and grated or chopped small fresh Apples
    2 cup, grated Carrots, raw
    2 medium Eggs
    1/3 cup (.33 cup) Canola Oil to vegetable oil of your choice
    2 tsp Vanilla Extract
    1/2 cup (.5 cup) halves Pecans (put on top of muffins before you bake)
    Zest of one lemon goes well in this recipe if you have it on hand.



Tips

If you want to use more apple and less carrot, that works too. I have done this recipe with all apples and they turn out although they are a quite a bit more moist.


Directions

Preheat over to 350 degrees.
Grease muffin tins for 12 muffins.
Mix dry ingredients flours, salt, soda, together in one bowl
In a larger bowl, add sugar, and spices to your taste.
Add the grated carrot and chopped apples to sugar and spices. Then add the rest of the wet ingredients, eggs, vanilla, oil.
Mix lightly then add the bowl of dry ingredients.
Mix to incorporate all ingredients together.
Immediately fill muffin tins and bake 20 to 25 minutes until toothpick mostly comes out clean.

Serving Size: 12 muffins
