Ingredients

1 1/4 cups [284 gram(s)] Tera's Whey grassfed whey protein powder
4 tbsp Coconut flour - raw, organic
2.5 tsp Baking Powder
1 package active dry yeast
1 tsp. xanthan gum
0.25 tsp Baking Soda
0.25 tsp Cream Of Tartar
0.5 tsp Himalayan Pink Salt
12 oz Philadelphia Cream Cheese - softened/ not hot
4 extra large Egg, fresh, whole, raw - room temp
4 tbsp Heavy Whipping Cream/ room temp
4 tbsp Butter, salted -- melted/ not hot
12 tsp Bacon grease - cooking fat - melted/ not hot
2 tbsp Apple Cider Vinegar, Bragg's Organic
Directions
Preheat oven to 325 degrees F. Grease 9 x 5 inch loaf pan (line bottom with parchment & grease parchment also).
In Large bowl, mix whey powder, coconut flour, baking powder, xantham gum, cream of tarter, baking soda, salt.
In another bowl, using stand mixer, combine softened cream cheese, melted butter, melted bacon fat, heavy cream, and vinegar. Sift dry ingredients into wet ingredients. Stir LIGHTLY by hand to combine -- do NOT overmix!!
Pour batter into prepared ban and bake for 45 minutes, until loaf is gold brown and toothpick inserted into middle is clean. Don't UNDERBAKE or bread will sink as it cools.
Cool in pan 15 minutes. -- AT LEAST -- before slicing.
Use serrated knife to slice thinly.
Store in refrigerator (up to one week).
