Introduction

Carrot cake without oil, butter or refined sugar. Gluten free if made with GF oat flour. Carrot cake without oil, butter or refined sugar. Gluten free if made with GF oat flour.

Ingredients

    4 medium carrots, grated (220g)
    1 large Banana (120g)
    1/4 cup (60g) Date Syrup
    200g Oat Flour
    3 tsp Baking Powder
    1 tsp Cinnamon, ground
    0.5 tsp Nutmeg, ground
    1 tsp Salt
    2 large Egg, fresh, whole, raw
    100g Sultanas
    100g Pecans
    3 tbsp (45ml) Milk, 1%

Directions

1. Beat eggs and add grated carrots, mashed banana, date syrup and milk.
2. Stir well and add flour, baking powder, spices, salt, sultanas and pecans.
3. Stir well and pour into baking tin.
4. Bake for 1 hour at 180c
5. Cool completely before slicing into 16.
