Ingredients

    8 oz Ground beef, lean
    1 tbsp Extra Virgin Olive Oil
    1 cup, chopped Onions, raw
    1 cup, pieces or slices Mushrooms, fresh
    1 medium Summer Squash
    .5 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
    45 gram(s) Kirkland Artichoke Hearts marinated in oil

Directions

Chop all vegetables. Saute onion and garlic in olive oil. Add beef, breaking up as you cook. Add remaining vegetables, stir and cover. Stir occasionally until zucchini is done.
