Ingredients

    1 cup dates, pureed
    1/2 cup cashew butter, no added salt
    1/2 cup flax seeds
    1/2 cup chopped cashews
    1/2 cup chopped dried cranberries
    1 cup dry oatmeal
    1/2 cup sprouted pumpkin seeds
    1/4 cup unsweetened coconut
    1/4 cup sunflower seeds

Tips

can be cut into larger bars, but I find the 2 inch size to be perfect for me.


Directions

Soak dates in half cup of warm water and then puree to make a date paste. Stir in all natural cashew butter and mix well. Add seeds, chopped nuts, and dried fruit and mix well. Add oatmeal and mix well. Line 8x8 baking pan with parchment paper and press down into pan. Refrigerate about 2 hours, then pull out and cut into bars. Wrap individual bars in wax paper and store in freezer or refrigerator.

Serving Size: Makes 16 two-inch square bars
