Ingredients

    1 tsp Olive Oil
    1 clove Garlic , chopped
    1.5 cup Black Beans - canned, rinsed and drained
    1.5 cup Yellow Sweet Corn, Canned, rinsed and drained
    1.5 cup, Sweet potato, peeled and cubed into small pieces
    1 TBSP hot and sweet Jalapeno, chopped (or use fresh)
    1 TBSP Lime Juice
    2 tsp Cajun Seasoning
    2 tsp smoked paprika
    2 tsp Goya Adobo seasoning

    1 cup Brown Rice, long grain (cooked in 2 cups water)

    (Optional toppings: not included in nutritional count, chopped avocado, sour cream, chopped lettuce and tomatoes.)


Directions

Steam brown rice according to directions. While rice cooks:
1. saute garlic in olive oil
2. add chopped jalapeno and sweet potato, stir for 2 minutes over medium heat.
3. add black beans, corn, and seasonings (add more or less to taste)
4. Add lime juice
5. simmer on very low heat for 20-30 minutes, until sweet potato is tender.


Serving Size: Makes 4 servings: 1/2 cup rice, 1 cup black bean mixture
