Ingredients

1 package Penne Rigate Pasta (rotelle, bow tie and other pastas also work well. I like to use the Ronzoni Healthy Harvest pastas.)
2 jars Pasta Sauce (such as Wild Harvest Organic Pasta Sauce
16 oz Italian Turkey Sausage
1 cup Mushrooms
1 cup Zucchini
1/2 cup Carrot
1/2 tbs Garlic, minced
1 tbs Italian Seasoning
1/8 tsp Cayenne Pepper
1/4 tsp Salt (I use the Morton Lite Salt)
2 cups Mozzarella Cheese, shredded
1/2 cup fresh Parmesan, grated
Directions
1. Preheat oven to 350*
2. Cook pasta according to package directions.
3. Brown sausage
4. While sausage is browning, add veggies to a food processor and finely chop/mince.
5. Spray a sauce pan with cooking spray and add veggies. Add in salt, italian seasoning, cayenne pepper and garlic. Saute veggies until cooked through, about 3-5 minutes.
6. Place pasta, cooked sausage, cooked veggies, shredded mozzarella and pasta sauce in a large bowl. Mix together until well blended.
7. Spray a 9 x 13 baking pan with cooking spray and poor in pasta mixture.
8. Sprinkle top with 1/2 cup parmesan cheese
9. Bake uncovered for 30 minutes, or until hot all the way through.
10. Remove from oven and let sit 5 minutes before serving.
11. Enjoy!
